The pesto is just for complexity of flavor. We do find that browning the shallots makes a difference in the end result!

It seems like an extra unnecessary step as I doubt you will notice any difference in the end result. Am I wrong? Also, do you actually taste the pesto or does it simply add a deepened (unidentifiable) flavor to the dish?

Given how big the chunks are trying to cook them just by frying was more time consuming. I ended up adding some extra broth and braising to speed up the process.

We haven’t tried it, but I think the filling would be fine for a day or 2 in the fridge. I wouldn’t recommend freezing.

Pour said filling into a greased pie pan. Top with store-bought puff pastry. Melt a bit of butter, stir in a sprinkle of dried sage. Brush butter/sage mixture on top of puff pastry. Bake as directed. Oh we are SO so glad to hear it! Fresh sage would be perfect. We agree, it does taste best fresh out of the oven! There are a few things that could speed up prep (make dough in advance, make filling in advance), but it is better freshly made.
